weekend cooking
I’ve decided I’m going to keep a record of the stuff I cook. this here is the first record 
Yesterday I made the Sweet Potato and Apple Casserole, today I made a pair of broccoli and potato casseroles.
It’s been a potato casserole kinda weekend 
Saturday I made the Sweet Potato and Apple Casserole. Good recipe, done it before.
Then we were looking at the fact that last weekend, when I made the broccoli & cheese soup, I forgot to use the fresh broccoli. So I had a bunch of fresh broccoli that was going to go bad, but I REALLY didn’t need a second set of broccoli & cheese soup. (we have 8 containers of various soups in the freezer now )
So kiir went searching All Recipes, our recipe resource ( 
) for something to do with the broccoli and the leftover potatoes. Bought 2 5lb bags of those last week, but only used one in the baked potato soup, so had a bunch of potatoes to get rid of still
Found a couple, and tried them today. The first, Potato and Broccoli Casserole, looks decent. Probably going to need some tweaks before it gets good, but I made it up and tossed it in the freezer for some day.
The second, Smashed Potato and Broccoli Casserole, is more of a mashed-potatoes with broccoli kind of thing. I don’t think I’m gonna bother with it next time, since it seemed like a somewhat lesser version of our baked potato soup, but with broccoli. Which I might go ahead and add next time to the baked potato, that sounds good
