Sweet Potato & Apple Casserole

Made this yesterday, haven’t eaten that round, but I’ve made it enough that I’m going ahead with this entry anyway :)

First of all, taste:

Sweet. It’s yams and caramel, in essence, what else COULD it be but sweet. I actually prefer to use Granny Smith apples, b/c they’re tart and provide an off-beat for the sweet yams and sugar/butter mixture. Otherwise this dish can easily be way too sweet. Made it with golden delicious yesterday, b/c we had a bunch. Probably will turn out like the red delicious. It’s not too sweet, but it’s on the verge.

Preparation: It’s not that hard. I mean, peel, boil, cut yams. peel & cut apples. It got a 4 here for the caramel step. The recipe calls for flour in the butter, but I never like how that turns out. Always gets a bit clumpy. Even when it’s mixed well, the brown sugar suddenly turns into clumps. The other reason it took a full hit is for the amount of concentration necessary for the caramel step. Takes a lot of work and careful attention. Can’t put that down for a moment. Luckily it goes on the very top, so it’s not that bad, you can always prep it after you’re done the other steps. But it’s hard to do as part of a bunch of simuls.

Recipe: Took a hit b/c of the flour and the apples, which are a personal preference. Also, calls for quarter-cup buter and brown sugar, I find at least a half cup (one stick of butter) works best. Otherwise it doesn’t really coat well. Oh yeah, it calls for pecans for a topping. I don’t usually put those on (I don’t usually have them :o ), but I have on occasion. Also walnuts work. Any nut, really, but not something with a bitter taste.

Cost: Yams. Apples. Brown Sugar. A few spices & butter, but you have those already right? :) Brown sugar is a yes/no thing. I don’t usually have it, b/c I only do a handful of recipes with it and it always gets rocksolid between bouts. So probably comes to about 5$ for the set, rounded. That’s a pretty good price :) If you don’t have nuts for it, that probably raises it to near 10$, but the nuts can be used for a lot of things since you don’t need that many, so I’m not really counting the cost.
