Potato and Broccoli Casserole

This is another of the dishes we made to burn off potatoes and broccoli :o

Haven’t tasted it, so no taste rating, I’ll edit this and make a post with the update info when we try it out.

Preparation: Pretty simple. Biggest issue is getting a big enough bowl to do it in! If we like it and do it again, I’ll add more sour cream probably. Maybe some milk, to thin it with. It gets rather thick, and then you add in potatoes, broccoli, cheese, and it just gets harder to stir!

Recipe: Seems to work out well. Like I said, might add some milk or sour cream to thin the mixture a bit for stirring & mixing purposes. Otherwise, seems good off the vine. Didn’t bother with the saltines, I admit. We simply don’t eat them, and the number of recipes I have that call for them are limited, so it seemed unnecessary. May try different spices (vs the dijon mustard) next time, if it seems “close”.

Cost: Sour cream, cream of … soup, broccoli cheese & potatoes. Probably 5$ for it. Cream of … is the only non-reuse item (sour cream if you buy a small container, too, I’ll grant), but it can usually be found for 50-70c a can, so it doesn’t hurt us too badly. Dijon mustard, if you don’t have any, will set back as an initial, too. But we only need a tablespoon, so you get a lot of uses from one jar :o
