Homemade Four Cheese, Mac and Cheese

This is a recipe I got from my mom, I think I may have modified it some from what she does, but it turns out great so I’m adding it in here.

Recipe: It is a fairly easy recipe. There is some prep work but overall it isn’t too bad.

Ingrediant wise: White Chedder 8 ounces
Mozerella 8 ounces
Montery Jack 8 ounces
Parmasagn Cheese 1 cup or so
1 box of macaroni noodles
Milk (maybe 1 cup)
Flour 1/2 cup
Seasonings to taste, I use garlic and white wine seasoning

First you start by boiling the macaroni, though this works just as well with any small noddle we use rotini sometimes. While that is boiling get everything but the parmasagn together. Grate the cheese so it is shreaded. In a sauce pan pour about 1 cup of milk and half a cup of flour, mix it together well on medium heat, then start adding in the cheese. Start slowly and let it melt in before adding more, add milk as needed to thin the melted cheese, also add in any spices to the cheese while melting it. When it is all melted put it on low heat and drain the macaroni. Pour about 1/3 of the drained macaroni into the dish, then pour 1/3 of the melted cheese over it, sprinkle with parmasagn cheese. Pour another 1/3 of noodles on top and do the same, then pour on the last of the noodles cover with the rest of the melted cheese and parmasagn. Cover with alluminum foil and bake for about 45 minutes, remove the foil and bake for another 15 minutes or so if you like the top crispy. Take out and serve. This recipe should serve 6-8 maybe more depending on what sides you include with it.

Taste: It is yummy if you like a lot of cheese, you can use whatever cheeses you want so you can get all sorts of different flavors depending on what you use. We sometimes substitute in pepper jack for the monteray jack.

Preparation: This takes about 2 pans to do, 1 to boil the macaroni in and one for the cheese sauce plus a container to put the finished product in to bake, we use our corningware big oval dish for this, works well. The cheese grating and small prep work can be a bit of a pain but overall it is a fairly easy recipe to make.

Recipe: I like the recipe it is easy to follow and use, this is another one from my mom though so this is the first time I’ve written it down I normally go from memory. It is fairly simple, easy and doesn’t really need many substitutions.

Cost: Macaroni will cost $1, The cheese is a bit more expensive maybe between $6-10 in total for all the cheese, less if you find stuff on sale. So overall it costs about $10 to make for 6 to 8 servings which seems a good price overall, not as cheap as some of the other recipes, but not overly expensive either.
