Taste: This was another dish on the sunday impromptu menu. i just kinda picked random dishes that sounded interesting :) Turned out to not like the taste, but I don’t like balsamic vinaigrette particularly. I knew that, but I figured i’d try it as the recipe called before i started messing with a major ingredient. Tasted like balsamic vinegar, basically. With corn and beans. It was ok, and did go well with cornbread, but i need to do something about the bite of the dressing, i don’t think it worked right.

Preparation: Well, dump a bunch of stuff in a big bowl, “toss”, throw in the fridge for 12 hours/overnight. It’s not a big problem, per se. Except I didn’t want to do overnight :o I don’t think 2 hours vs overnight really hurt it that badly, though. Wouldn’t really want to do it as an entree, but it did make a decent side/salad dish

Recipe: Straightforward and simple. Had to increase the balsamic vinaigrette b/c .5C in 4 cans of beans/corn was … insignificant :o Technically, had I not ended up increasing it to 2C it might not have tasted as strong. Except then it would have been black beans. and corn. yeah. pretty much it. and at that point i could have just made two bowls. one with beans. one with corn. have some! If I do this again, i’ll play with the dressing. More oil less vinegar maybe. Maybe increase the spice content as well

Cost: 2 cans of corn. 2 cans of beans. buncha small stuff. vegetable medley, which’ll raise the cost (unless you have the onions, peppers, etc; I needed them for both recipes, so it split ok). vinaigrette. Which I ended up making myself. Gonna skip reviewing that recipe, b/c .5C olive oil, .5C balsamic vinegar, dash of garlic … really not worth a writeup, capiche :o
